  • 1 lb boneless skinless chicken breasts
  • 1 cup ricotta cheese
  • 1 cup fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 2 eggs
  • 1 cup heavy cream (for sauce)
  • 23 garlic cloves, minced

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a bowl, combine ground chicken, ricotta cheese, chopped spinach, breadcrumbs, Parmesan cheese, eggs, salt, and pepper until well mixed.
  3. Form the mixture into golf ball-sized meatballs and place them in the prepared dish.
  4. Bake for 25-30 minutes until golden brown and cooked through.
  5. For the sauce, melt butter in a skillet over medium heat; sauté garlic until fragrant then add heavy cream and stir until it thickens. Mix in fresh spinach until wilted.
