  • 8 oz short pasta (rotini or fusilli)
  • 1 (5 oz) can chunk light tuna in water, drained
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup mayonnaise or Greek yogurt
  • 1 tsp Dijon mustard
  • 2 tbsp lemon juice (freshly squeezed)
  • Salt and pepper to taste
  • 2 tbsp fresh herbs (parsley or dill), chopped

Instructions

  1. Cook the pasta in salted boiling water until al dente (8-10 minutes). Drain and rinse under cold water to cool.
  2. While the pasta cools, chop cherry tomatoes and cucumber; finely chop the red onion.
  3. In a large bowl, mix drained tuna with mayonnaise, mustard, lemon juice, salt, and pepper until smooth.
  4. Gently fold in the cooled pasta and prepared vegetables into the tuna mixture.
  5. Add chopped fresh herbs and stir gently to combine.
  6. Cover and chill in the fridge for at least 30 minutes before serving.
