- 8 oz short pasta (rotini or fusilli)
- 1 (5 oz) can chunk light tuna in water, drained
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup mayonnaise or Greek yogurt
- 1 tsp Dijon mustard
- 2 tbsp lemon juice (freshly squeezed)
- Salt and pepper to taste
- 2 tbsp fresh herbs (parsley or dill), chopped
Instructions
- Cook the pasta in salted boiling water until al dente (8-10 minutes). Drain and rinse under cold water to cool.
- While the pasta cools, chop cherry tomatoes and cucumber; finely chop the red onion.
- In a large bowl, mix drained tuna with mayonnaise, mustard, lemon juice, salt, and pepper until smooth.
- Gently fold in the cooled pasta and prepared vegetables into the tuna mixture.
- Add chopped fresh herbs and stir gently to combine.
- Cover and chill in the fridge for at least 30 minutes before serving.
