- 1 can (15 oz) low-sodium chickpeas, rinsed and drained
- 1 cup fresh basil leaves
- 1/4 cup fresh lemon juice (about 2 lemons)
- 2 garlic cloves
- 1/4 cup tahini
- 3 tbsp extra virgin olive oil
- 1/2 tsp salt
- 2–4 tbsp water (as needed)
Instructions
- Prepare your ingredients by rinsing the chickpeas under cold water and draining well.
- In a food processor, combine chickpeas, basil leaves, lemon juice, garlic, tahini, salt, and half of the olive oil.
- Blend until smooth; add water gradually if needed to reach desired consistency.
- Taste and adjust seasoning with more salt or lemon juice if necessary.
- Transfer to a serving bowl and drizzle remaining olive oil on top.
- Serve with pita chips or veggie sticks.
