  • 34 boneless, skinless chicken breasts
  • 1 cup salsa verde
  • 4 oz pepper jack cheese, sliced
  • 2 tbsp olive oil
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp lime juice

Instructions

  1. In a bowl, combine salsa verde, lime juice, and olive oil to create the marinade.
  2. Place chicken breasts in a resealable bag, pour in the marinade, seal tightly, and refrigerate for at least 30 minutes.
  3. Preheat grill to medium-high heat (375°F/190°C).
  4. Remove chicken from marinade and discard leftover marinade.
  5. Grill chicken for 6-7 minutes on each side until it reaches an internal temperature of 165°F (75°C).
  6. In the last minute of cooking, top each breast with pepper jack cheese and close the grill lid to melt.
  7. Let rest for 5 minutes before garnishing with cilantro and serving.
