  • 4 boneless, skinless chicken breasts
  • 2 cloves fresh garlic, minced
  • 1/2 cup all-purpose flour
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1 cup low-sodium chicken broth
  • 2 tbsp capers, rinsed
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp olive oil
  • 2 tbsp butter

Instructions

  1. Flatten chicken breasts between plastic wrap until even thickness is achieved.
  2. Season both sides with salt and pepper, then dredge in flour.
  3. In a skillet over medium-high heat, melt butter with olive oil. Sear chicken for 4-5 minutes per side until golden brown. Remove from skillet.
  4. In the same skillet, sauté minced garlic until fragrant. Add lemon juice and chicken broth; simmer for 3 minutes.
  5. Stir in capers and return chicken to the skillet. Coat in sauce and warm through for an additional minute.
  6. Garnish with parsley before serving.
