- 2 cups mashed potatoes (from about 2 large Yukon Gold potatoes)
- 1 tsp fresh thyme (or 0.5 tsp dried)
- 1 tsp fresh rosemary (or 0.5 tsp dried)
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- Chop onions, carrots, and garlic.
- In a skillet over medium heat, add olive oil; sauté onions and carrots until soft.
