  • 1 lb ground beef or Italian sausage
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 28 oz canned diced tomatoes (preferably fire-roasted)
  • 4 cups beef broth (low-sodium)
  • 2 cups small pasta (like shells or elbows)
  • 2 cups shredded mozzarella cheese
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/4 tsp red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, brown the ground meat until fully cooked. Add diced onion and minced garlic; sauté until fragrant.
  2. Stir in canned tomatoes and beef broth. Bring to a boil.
  3. Add pasta and reduce heat; simmer until pasta is al dente, about 8–10 minutes.
  4. Mix in shredded mozzarella cheese until melted. Season with basil, oregano, red pepper flakes, salt, and pepper.
