Ingredients

  • 1 lb lean ground beef
  • 2 tbsp taco seasoning
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (15 oz) can corn, drained
  • 1 (14.5 oz) can crushed fire-roasted tomatoes
  • 2 cups shredded cheddar cheese
  • 2 cups tortilla chips
  • ½ cup sour cream (optional)

Instructions

  1. Brown the ground beef in a skillet over medium heat until no longer pink; drain excess fat.
  2. In a large bowl, combine cooked beef with taco seasoning, black beans, corn, and crushed tomatoes.
  3. Layer half of the mixture in the Crockpot and top with half of the shredded cheese. Repeat with remaining mixture and cheese.
  4. Cover and cook on low for 4-6 hours or high for 2-3 hours until heated through.
  5. About 20 minutes before serving, sprinkle crushed tortilla chips on top for added crunch.
  6. Serve hot with optional sour cream.
