- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 1 medium onion, chopped
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 4 cups low-sodium chicken broth
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn kernels (fresh or frozen)
- 1 cup tortilla strips
- 1/2 cup fresh cilantro, chopped
- Juice of 1 lime
Instructions
- In a large pot over medium heat, add olive oil and cook diced chicken until golden brown and cooked through. Remove and set aside.
- Sauté chopped onion and minced garlic in the same pot until fragrant (about 3 minutes).
- Stir in diced tomatoes, black beans, corn, and chicken broth. Bring to a gentle boil.
- Return the chicken to the pot and let everything simmer for 20-25 minutes for flavors to meld.
- Squeeze lime juice into the soup just before serving. Garnish with cilantro and tortilla strips.
