  • 4 medium bell peppers (red, yellow, or green)
  • 1 cup cooked rice (or quinoa)
  • 1 pound ground meat (beef, turkey, or vegetarian alternative)
  • 1 can diced tomatoes (drained)
  • ½ cup grated cheese (mozzarella or cheddar)
  • Seasonings: garlic powder, onion powder, salt, pepper

Instructions

  1. Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds.
  2. Blanch the peppers in boiling water for 5 minutes to soften.
  3. In a skillet, sauté onions and garlic until translucent. Add ground meat and cook until browned; stir in cooked rice/quinoa and diced tomatoes.
  4. Stuff each pepper with the mixture and place them upright in a baking dish. Top with cheese.
  5. Cover with aluminum foil and bake for about 25 minutes; then remove foil and bake for an additional 10-15 minutes until tender.
