- 1 lb lean ground beef
- 2 medium zucchinis, sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 1 cup tomato sauce
- 2 tsp Italian seasoning
- Salt and pepper to taste
- ½ cup panko breadcrumbs
- 2 tbsp olive oil (divided)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat 1 tbsp of olive oil over medium heat. Sauté onion and garlic until translucent.
- Add ground beef and cook until browned (about 5-7 minutes). Drain excess fat if necessary.
- Stir in sliced zucchini, tomato sauce, Italian seasoning, salt, and pepper. Cook for an additional 5 minutes.
- In a greased baking dish, layer half of the beef mixture followed by half of the cheese. Repeat with the remaining mixture and cheese.
- In a small bowl, mix panko breadcrumbs with the remaining olive oil and sprinkle over the casserole.
- Bake for 25-30 minutes until golden brown on top. Let it rest for 10 minutes before serving.
