Description

Ground Beef & Zucchini Casserole is a comforting dish that combines savory ground beef and tender zucchini, baked to perfection under a crispy cheese crust. This easy one-pan meal is perfect for busy weeknights or cozy family dinners, providing a delightful explosion of flavors in every bite.


Ingredients

  • 1 lb lean ground beef
  • 2 medium zucchinis, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 cup tomato sauce
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • ½ cup panko breadcrumbs
  • 2 tbsp olive oil (divided)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat 1 tbsp of olive oil over medium heat. Sauté onion and garlic until translucent.
  3. Add ground beef and cook until browned (about 5-7 minutes). Drain excess fat if necessary.
  4. Stir in sliced zucchini, tomato sauce, Italian seasoning, salt, and pepper. Cook for an additional 5 minutes.
  5. In a greased baking dish, layer half of the beef mixture followed by half of the cheese. Repeat with the remaining mixture and cheese.
  6. In a small bowl, mix panko breadcrumbs with the remaining olive oil and sprinkle over the casserole.
  7. Bake for 25-30 minutes until golden brown on top. Let it rest for 10 minutes before serving.
