  • 4 cloves fresh garlic, minced
  • 4 tbsp unsalted butter
  • 1 cup grated parmesan cheese
  • 1 cup low-sodium chicken broth
  • 1 cup long-grain white rice
  • 2 cups water (for cooking rice)
  • 2 tbsp chopped fresh parsley

Instructions

  1. Heat 2 tbsp of butter in a large skillet over medium heat. Season chicken breasts with salt and pepper and cook until golden brown, about 5-7 minutes per side.
  2. Add minced garlic to the skillet and sauté until fragrant, about 1 minute. Pour in the chicken broth and let simmer for an additional 10 minutes.
  3. While the chicken simmers, bring 2 cups of water to a boil in a separate pot. Add rice and cook according to package instructions.
  4. Once the chicken is cooked through, stir in grated parmesan cheese until melted and creamy.
  5. Fluff the cooked rice with a fork and serve on plates topped with the Chicken Scampi and any remaining sauce. Garnish with chopped parsley before serving.
