  • 8 oz fresh linguine
  • 6 tbsp cowboy butter (3 tbsp butter, 3 minced garlic cloves, juice of 1 lemon, fresh herbs)
  • 1/4 cup fresh parsley (chopped)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1/2 cup freshly grated Parmesan cheese

Instructions

  1. Gather all ingredients. Cut chicken into bite-sized pieces and season with salt and pepper.
  2. Boil salted water in a large pot. Cook linguine according to package instructions until al dente (about 3-4 minutes). Drain, reserving some pasta water.
  3. Heat olive oil in a skillet over medium heat. Add chicken pieces; cook until golden brown (5-7 minutes). Remove from skillet.
  4. In the same skillet, melt cowboy butter ingredients over medium heat: add garlic, cook until fragrant; stir in lemon juice and parsley.
  5. Return chicken to skillet along with linguine; toss to coat in sauce, adding reserved pasta water for creaminess if needed.
