- 2 lbs boneless beef chuck roast
- 4 dried guajillo chiles
- 2 cups low-sodium chicken broth
- 12 corn tortillas
- 2 cups shredded Oaxaca cheese
- 1 cup finely chopped onion
- 1 cup finely chopped cilantro
- Lime wedges for serving
Instructions
- Season the beef chuck roast with salt and pepper. Sear in a hot skillet for 4-5 minutes on each side until browned.
- Boil water in a separate pot, add guajillo chiles until softened (about 10 minutes). Blend with chicken broth until smooth.
- Combine the seared beef and sauce in a slow cooker or Dutch oven. Simmer on low for 3 hours until fork-tender.
- Warm tortillas slightly in a skillet or microwave.
- Shred the cooked beef and fill tortillas with beef and cheese, rolling tightly.
- Place seam-side down in a greased baking dish and cover with guajillo sauce and more cheese. Bake at 350°F (175°C) for 20-25 minutes until bubbling.
