- 1 whole turkey (12–14 pounds)
- 3 tbsp extra virgin olive oil
- 2 tsp kosher salt
- 1 tsp freshly cracked black pepper
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 1 lemon, quartered
- 6 garlic cloves, whole
Instructions
- Preheat oven to 450°F (230°C).
- Pat the turkey dry with paper towels.
- Place the turkey breast-side down on a cutting board. Cut along both sides of the backbone with kitchen shears and remove it.
- Flip the turkey over and season with olive oil, salt, pepper, minced garlic, and chopped herbs.
- Place the turkey on a roasting rack in a baking pan and roast for about 1 hour until golden brown and internal temperature reaches 165°F (74°C).
- Let rest for at least 20 minutes before carving.
