- 1 whole turkey (12–14 pounds)
- 1/4 cup extra virgin olive oil
- 2 tsp kosher salt
- 1 tsp freshly ground black pepper
- 2 tbsp fresh thyme, chopped
- 2 tbsp fresh rosemary, chopped
- Zest and juice of 1 lemon
- 4 garlic cloves, minced
Instructions
- Preheat oven to 450°F (232°C) and line a large baking sheet with foil or parchment paper.
- Place the turkey breast-side down on a cutting board. Remove the backbone using kitchen shears or a sharp knife.
- Flip the turkey breast-side up and press firmly on the breastbone to flatten it.
- In a bowl, combine olive oil, garlic, lemon juice, thyme, rosemary, salt, and pepper. Rub generously all over the turkey.
- Position the marinated turkey on the prepared baking sheet and roast for about 1 hour and 15 minutes until its internal temperature reaches 165°F (74°C). Tent with foil if browning too quickly.
- Let rest for at least 20 minutes before carving to allow juices to redistribute.
