  • 1 whole turkey (1214 pounds)
  • 1/4 cup extra virgin olive oil
  • 2 tsp kosher salt
  • 1 tsp freshly ground black pepper
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh rosemary, chopped
  • Zest and juice of 1 lemon
  • 4 garlic cloves, minced

Instructions

  1. Preheat oven to 450°F (232°C) and line a large baking sheet with foil or parchment paper.
  2. Place the turkey breast-side down on a cutting board. Remove the backbone using kitchen shears or a sharp knife.
  3. Flip the turkey breast-side up and press firmly on the breastbone to flatten it.
  4. In a bowl, combine olive oil, garlic, lemon juice, thyme, rosemary, salt, and pepper. Rub generously all over the turkey.
  5. Position the marinated turkey on the prepared baking sheet and roast for about 1 hour and 15 minutes until its internal temperature reaches 165°F (74°C). Tent with foil if browning too quickly.
  6. Let rest for at least 20 minutes before carving to allow juices to redistribute.
