Instructions
- Preheat the oven to 325°F (160°C). Line an 8-inch square baking pan with parchment paper.
- In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix well and press evenly into the bottom of the prepared pan.
- Beat softened cream cheese until smooth; gradually mix in sugar, sour cream, and vanilla extract. Add eggs one at a time until just blended.
- Gently fold in chopped pecans and pour the filling over the crust.
- Bake for 45-50 minutes or until edges are set but center jiggles slightly. Cool at room temperature before refrigerating for at least 4 hours.
