- 1 cup panko breadcrumbs

Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Slice zucchini into half-moons about 1/4 inch thick. Sauté in olive oil over medium heat until slightly softened (5-7 minutes).
- In a large bowl, mix sautéed zucchini with marinara sauce, half the mozzarella, Italian seasoning, salt, pepper, and eggs until well combined.
- Pour the mixture into the prepared baking dish. Top with remaining mozzarella, Parmesan cheese, and panko breadcrumbs.
- Bake for 30-35 minutes until bubbly and golden brown. Allow to cool for 10 minutes before serving.
