  • 4 cups sliced zucchini (approximately 3 medium zucchinis)
  • 2 cups marinara sauce
  • 2 cups shredded whole milk mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • 2 tsp Italian seasoning
  • 3 large eggs
  • Salt and pepper to taste
  • 1 cup panko breadcrumbs
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Slice zucchini into half-moons about 1/4 inch thick. Sauté in olive oil over medium heat until slightly softened (5-7 minutes).
  3. In a large bowl, mix sautéed zucchini with marinara sauce, half the mozzarella, Italian seasoning, salt, pepper, and eggs until well combined.
  4. Pour the mixture into the prepared baking dish. Top with remaining mozzarella, Parmesan cheese, and panko breadcrumbs.
  5. Bake for 30-35 minutes until bubbly and golden brown. Allow to cool for 10 minutes before serving.
