  • 8 oz fresh mushrooms, diced
  • 1 cup heavy cream
  • 1 cup chicken or vegetable stock
  • 2 tbsp fresh herbs (like thyme or parsley), chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Roll out puff pastry and cut into circles using a cookie cutter.
  2. Place half circles on a parchment-lined baking sheet and lightly score smaller circles inside each.
  3. Bake for 15-20 minutes until golden brown.
  4. In a skillet over medium heat, melt butter. Sauté shallots until translucent, then add mushrooms until browned.
  5. Stir in heavy cream and stock; simmer until thickened (about 5 minutes).
  6. Once pastries cool slightly, open the tops and fill with the creamy mixture, garnishing with fresh herbs.
