- 14 oz firm tofu, drained and pressed
- 1 cup full-fat coconut milk
- 4 tbsp vegan butter
- 3 cloves garlic, minced
- 1 inch ginger, minced
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Cut the pressed tofu into bite-sized cubes.
- In a non-stick skillet over medium heat, melt vegan butter until bubbly. Add minced garlic and ginger; sauté for about 1 minute.
- Add the cubed tofu to the skillet and cook until golden brown on all sides (8-10 minutes).
- Pour in coconut milk along with turmeric, cumin, coriander, and salt. Stir well to combine.
- Allow the mixture to simmer for 5-7 minutes until thickened, stirring occasionally.
- Stir in freshly chopped cilantro just before serving.
