  • 14 oz firm tofu, drained and pressed
  • 1 cup full-fat coconut milk
  • 4 tbsp vegan butter
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Cut the pressed tofu into bite-sized cubes.
  2. In a non-stick skillet over medium heat, melt vegan butter until bubbly. Add minced garlic and ginger; sauté for about 1 minute.
  3. Add the cubed tofu to the skillet and cook until golden brown on all sides (8-10 minutes).
  4. Pour in coconut milk along with turmeric, cumin, coriander, and salt. Stir well to combine.
  5. Allow the mixture to simmer for 5-7 minutes until thickened, stirring occasionally.
  6. Stir in freshly chopped cilantro just before serving.
