  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter (melted)
  • ¾ cup brown sugar (packed)
  • 2 vanilla beans (seeds scraped)
  • 24 oz cream cheese (softened)
  • 1 cup sour cream
  • 3 large eggs (room temperature)
  • 2 tbsp all-purpose flour
  • 1 tbsp lemon juice

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a saucepan, melt the butter over medium heat until golden brown and nutty.
  3. Combine graham cracker crumbs and brown sugar in a bowl; mix with melted butter. Press into the bottom of a springform pan.
  4. Beat cream cheese until smooth; add vanilla bean seeds, sour cream, flour, lemon juice, and eggs one at a time until just combined.
  5. Pour filling over the crust and smooth the top. Bake for about 60 minutes or until slightly jiggly in the center.
  6. Turn off the oven and crack open the door to let cool for an hour before refrigerating.
