- 1 ripe mango (about 200g), chopped
- 1/4 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 3/4 cup milk (dairy or non-dairy)
- 2 tsp baking powder
- 1/4 tsp salt
Instructions
- Prepare your ingredients by chopping the mango into small pieces.
- In a large bowl, mix together rolled oats, baking powder, and salt.
- In another bowl, whisk together melted coconut oil, honey or maple syrup, milk, and chopped mango.
- Pour the wet mixture into the dry ingredients and fold gently until just combined.
- Heat a non-stick skillet over medium heat and grease lightly with coconut oil. Pour about 1/4 cup of batter per flapjack onto the skillet.
- Cook for about 3-4 minutes until bubbles form on top; flip and cook until golden brown on both sides.
- Serve warm, optionally drizzled with extra honey or syrup.
