  • 2 cups rolled oats
  • 1 ripe mango (about 200g), chopped
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 3/4 cup milk (dairy or non-dairy)
  • 2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Prepare your ingredients by chopping the mango into small pieces.
  2. In a large bowl, mix together rolled oats, baking powder, and salt.
  3. In another bowl, whisk together melted coconut oil, honey or maple syrup, milk, and chopped mango.
  4. Pour the wet mixture into the dry ingredients and fold gently until just combined.
  5. Heat a non-stick skillet over medium heat and grease lightly with coconut oil. Pour about 1/4 cup of batter per flapjack onto the skillet.
  6. Cook for about 3-4 minutes until bubbles form on top; flip and cook until golden brown on both sides.
  7. Serve warm, optionally drizzled with extra honey or syrup.
