- 12 oz spaghetti (or pasta of choice)
- 2 cups ripe tomatoes, diced
- 1 cup fresh basil leaves, chopped
- 4 garlic cloves, minced
- 3 tbsp extra virgin olive oil
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- In a large pot of salted boiling water, cook spaghetti until al dente according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then cook for about 6-7 minutes on each side until golden brown and fully cooked. Remove from the skillet and let rest.
- In the same skillet, add minced garlic and diced tomatoes; sauté for about 3-4 minutes until fragrant.
- Stir in chopped basil and juices from the resting chicken, simmering for another 2 minutes.
- Slice rested chicken into strips or cubes and return to skillet along with cooked pasta. Toss to coat evenly in sauce.
