  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 2 cups cherry tomatoes, halved
  • 1 cup fresh basil leaves
  • 8 oz pasta (spaghetti or penne)
  • 2 tbsp olive oil
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken by seasoning with salt and pepper. Heat olive oil in a large skillet over medium heat. Sauté the chicken until golden brown and cooked through (6-7 minutes per side). Remove from skillet.
  2. In the same skillet, add minced garlic and sauté until fragrant (about 30 seconds). Add halved cherry tomatoes and cook until they slightly soften.
  3. Cook pasta according to package instructions until al dente; reserve some pasta water before draining.
  4. Slice the cooked chicken and return it to the skillet with tomatoes. Add drained pasta and fresh basil, stirring gently to combine, adding reserved pasta water as needed.
  5. Remove from heat, sprinkle with Parmesan cheese, garnish with additional basil if desired, and serve hot.
