Ingredients

Scale
  • 6 large eggs
  • 1/3 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1/2 tsp smoked paprika (plus more for garnish)
  • Salt to taste
  • Pepper to taste

Instructions

  1. Boil the eggs: Place eggs in a pot, cover with cold water, and bring to a boil over medium heat. Once boiling, cover and remove from heat; let sit for 12 minutes.
  2. Cool and peel: Transfer eggs to an ice bath for about 5 minutes before peeling under running water.
  3. Make the filling: Slice each egg in half lengthwise and scoop yolks into a bowl. Mash yolks with mayonnaise, Dijon mustard, salt, and pepper until smooth.
  4. Pipe back in: Use a piping bag or plastic sandwich bag with the corner cut off to fill each egg white with the yolk mixture.
