- 1 cup (240g) full-fat cottage cheese
- 3 tbsp hot honey
- 2 tbsp olive oil

- Salt & pepper to taste
Instructions
- Preheat oven to 425°F (220°C).
- Toss diced sweet potatoes in olive oil, salt, pepper, cumin, and paprika.
- Spread sweet potatoes on a baking sheet lined with parchment paper and roast for 25-30 minutes until golden brown.
- While sweet potatoes roast, cook ground beef in a skillet over medium-high heat until browned, about 7-10 minutes. Season with salt and pepper.
- In serving bowls, layer roasted sweet potatoes topped with ground beef. Drizzle with hot honey and add spoonfuls of cottage cheese.
