  • 2 medium sweet potatoes (about 500g), peeled and diced
  • 1 lb (450g) lean ground beef
  • 1 cup (240g) full-fat cottage cheese
  • 3 tbsp hot honey
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss diced sweet potatoes in olive oil, salt, pepper, cumin, and paprika.
  3. Spread sweet potatoes on a baking sheet lined with parchment paper and roast for 25-30 minutes until golden brown.
  4. While sweet potatoes roast, cook ground beef in a skillet over medium-high heat until browned, about 7-10 minutes. Season with salt and pepper.
  5. In serving bowls, layer roasted sweet potatoes topped with ground beef. Drizzle with hot honey and add spoonfuls of cottage cheese.
