  • 1 bone-in ham (57 pounds)
  • 1 cup pure maple syrup
  • 1/2 cup brown sugar
  • 2 tbsp Dijon mustard
  • 2 tsp smoked paprika
  • 1 tsp freshly cracked black pepper
  • Whole cloves (optional)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Remove the ham from packaging and place it fat side up in a roasting pan.
  3. In a bowl, whisk together maple syrup, brown sugar, Dijon mustard, smoked paprika, and black pepper until smooth.
  4. Score the surface of the ham in a diamond pattern.
  5. Brush half of the glaze over the scored surface of the ham.
  6. Bake uncovered for about 15 minutes per pound, basting every 30 minutes with remaining glaze until caramelized and heated through (internal temperature should reach 140°F/60°C).
  7. Allow resting for 20 minutes before slicing.
