- 4 salmon fillets (6 oz each)
- 2 cups fresh spinach
- 4 oz crumbled feta cheese
- 2 garlic cloves, minced
- 2 tbsp freshly squeezed lemon juice
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- 1 tsp dried herbs (dill or oregano)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, then add spinach and cook until wilted.
- In a mixing bowl, combine sautéed spinach, feta, lemon juice, salt, pepper, and dried herbs.
- Place each salmon fillet skin-side down on a cutting board and cut a pocket into each fillet.
- Stuff each pocket generously with the spinach-feta mixture.
- Arrange the stuffed salmon on a parchment-lined baking sheet. Drizzle with olive oil and season lightly with salt and pepper.
- Bake for 20-25 minutes until cooked through and flaky.
