Ingredients

  • 4 salmon fillets (6 oz each)
  • 2 cups fresh spinach
  • 4 oz crumbled feta cheese
  • 2 garlic cloves, minced
  • 2 tbsp freshly squeezed lemon juice
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1 tsp dried herbs (dill or oregano)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, then add spinach and cook until wilted.
  3. In a mixing bowl, combine sautéed spinach, feta, lemon juice, salt, pepper, and dried herbs.
  4. Place each salmon fillet skin-side down on a cutting board and cut a pocket into each fillet.
  5. Stuff each pocket generously with the spinach-feta mixture.
  6. Arrange the stuffed salmon on a parchment-lined baking sheet. Drizzle with olive oil and season lightly with salt and pepper.
  7. Bake for 20-25 minutes until cooked through and flaky.
