  • 1 lb fresh salmon fillets
  • 2 cups short-grain sushi rice
  • 4 sheets nori (seaweed)
  • 1/2 cup spicy mayo (mayonnaise & sriracha mix)
  • 4 green onions, finely chopped
  • 2 tbsp toasted sesame seeds
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp unseasoned rice vinegar
  • 1 tsp sugar

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish with cooking spray.
  2. Rinse the sushi rice under cold water until clear, then cook according to package instructions (about 20 minutes).
  3. In a bowl, mix the warm rice with rice vinegar and sugar until well combined.
  4. Flake the salmon into bite-sized pieces and combine with spicy mayo, soy sauce, and green onions in another bowl.
  5. Layer half of the sushi rice at the bottom of the baking dish, followed by half of the nori sheets, then half of the salmon mixture.
  6. Repeat layering with remaining ingredients.
  7. Bake for 25-30 minutes until golden brown on top.
  8. Allow to cool slightly before serving; garnish with sesame seeds.
