  • 2 acorn squash (medium-sized)
  • 1 lb ground turkey or beef (lean)
  • 1 can (15 oz) black beans (rinsed)
  • 1 cup corn (fresh or frozen)
  • 1 cup bell peppers (diced, assorted colors)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 2 tsp cumin
  • 1 tsp paprika
  • 1 cup sharp cheddar cheese (shredded)
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 400°F (200°C). Cut each acorn squash in half lengthwise and scoop out the seeds. Place cut-side up on a baking sheet.
  2. Drizzle olive oil over the squash halves, season with salt and pepper. Roast for about 30-40 minutes until fork-tender.
  3. In a skillet over medium heat, sauté chopped onion and minced garlic until translucent. Add ground turkey or beef; cook until browned.
  4. Stir in black beans, corn, diced bell peppers, cumin, paprika, salt, and pepper. Heat through until vegetables are tender.
  5. Remove roasted squash from the oven; fill each half with the meat mixture and top with shredded cheese.
  6. Return to the oven for another 10-15 minutes until cheese is melted and bubbly.
