  • 4 medium Yukon Gold potatoes, diced
  • 1 can (15 oz) low-sodium chickpeas, rinsed and drained
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup vegetable broth
  • 2 tbsp tikka masala spice blend
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Prepare the slow cooker by plugging it in and setting it to low.
  2. In a skillet over medium heat, sauté the onions in oil until translucent. Add garlic and ginger; cook until fragrant (about 1-2 minutes).
  3. Add chopped potatoes and drained chickpeas to the slow cooker.
  4. Pour in the sautéed onions, coconut milk, vegetable broth, tikka masala spice blend, and salt. Stir well.
  5. Cover and cook on low for 6-8 hours.
  6. Stir in fresh cilantro before serving.
