  • 8 oz thin rice noodles
  • 1 cup bell peppers, sliced (any color)
  • 1 cup broccoli florets (fresh or frozen)
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 3 tbsp low-sodium soy sauce
  • 2 tsp sesame oil
  • 2 green onions, chopped (for garnish)

Instructions

  1. Prep the shrimp by peeling and deveining if necessary. Chop vegetables into bite-sized pieces.
  2. Boil water in a pot and cook rice noodles according to package instructions. Drain and set aside.
  3. Heat sesame oil in a large pan over medium-high heat. Sauté minced garlic and ginger until fragrant (approximately 30 seconds).
  4. Add sliced bell peppers and broccoli florets to the pan; stir-fry for about 3-4 minutes until slightly tender.
  5. Introduce the shrimp to the pan; cook until pink and opaque (about 3-5 minutes).
  6. Toss in cooked noodles and soy sauce; stir-fry for another minute until heated through.
  7. Serve hot, garnished with chopped green onions.
