  • 4 cups Rice Krispies
  • 1/2 cup unsalted butter
  • 10 oz mini marshmallows
  • 16 oz cream cheese (softened)
  • 1 cup heavy whipping cream
  • 3/4 cup granulated sugar
  • 1 tsp pure vanilla extract

Instructions

  1. Melt butter in a large pot over medium heat; add marshmallows, stirring until melted and smooth.
  2. Remove from heat and mix in Rice Krispies until evenly coated.
  3. Press the mixture into the bottom of a greased springform pan. Let it cool.
  4. Beat softened cream cheese with sugar until fluffy; mix in vanilla.
  5. Whip heavy cream to soft peaks; fold into cream cheese mixture.
  6. Pour filling over cooled crust; smooth out and refrigerate for at least 4 hours or overnight to set.
  7. Carefully release from pan, slice, and serve with extra Rice Krispies if desired.
