- 1 egg yolk
- 1 tsp vanilla extract
- 1/2 cup raspberry jam (high quality)
- Powdered sugar for dusting
Instructions
- 1. In a medium bowl, combine all-purpose flour, almond flour, and sugar. Mix well.
- 2. Add softened butter and egg yolk, then stir in vanilla extract until the mixture resembles coarse crumbs.
- 3. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for 1 hour.
- 4. Preheat the oven to 350°F (175°C). Roll out half of the chilled dough to 1/8-inch thickness and cut shapes using cookie cutters (include some with centers cut out).
- 5. Place cookies on a parchment-lined baking sheet and bake for 10-12 minutes until edges are golden.
- 6. Once cooled, spread raspberry jam on whole cookies and top with cut-out cookies.
- 7. Dust with powdered sugar just before serving.
