  • 1/2 cup almond flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1/2 cup raspberry jam (high quality)
  • Powdered sugar for dusting

Instructions

  1. 1. In a medium bowl, combine all-purpose flour, almond flour, and sugar. Mix well.
  2. 2. Add softened butter and egg yolk, then stir in vanilla extract until the mixture resembles coarse crumbs.
  3. 3. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for 1 hour.
  4. 4. Preheat the oven to 350°F (175°C). Roll out half of the chilled dough to 1/8-inch thickness and cut shapes using cookie cutters (include some with centers cut out).
  5. 5. Place cookies on a parchment-lined baking sheet and bake for 10-12 minutes until edges are golden.
  6. 6. Once cooled, spread raspberry jam on whole cookies and top with cut-out cookies.
  7. 7. Dust with powdered sugar just before serving.
