  • 1 pre-made pie crust
  • 1 cup canned pumpkin puree
  • 1 cup ricotta cheese (whole milk preferred)
  • 4 strips thick-cut bacon
  • 1 large sweet onion, sliced
  • 2 tbsp fresh sage, chopped
  • 3 large eggs
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and let the pie crust sit at room temperature.
  2. In a skillet over medium heat, cook the bacon until crispy. Remove and crumble it into bits.
  3. In the same skillet, sauté sliced onions in leftover bacon grease until golden brown, about 15 minutes.
  4. In a bowl, combine pumpkin puree, ricotta cheese, crumbled bacon, caramelized onions, chopped sage, eggs, salt, and pepper. Mix until creamy.
  5. Pour the filling into the pie crust and bake for 40-45 minutes until set and golden brown.
  6. Allow to cool slightly before slicing and serve warm or at room temperature.
