  • 1/2 cup pure maple syrup
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1/4 tsp salt
  • 2 large eggs (room temperature)
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together pumpkin puree, brown sugar, maple syrup, eggs, and vanilla extract until smooth.
  3. In another bowl, sift together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Scoop dough onto prepared baking sheets about 2 inches apart.
  6. Bake for 12-15 minutes until edges are golden but centers appear slightly underbaked.
  7. Let cool for 5 minutes on the sheets before transferring to wire racks to cool completely.
