  • 1 cup shelled unsalted pistachios, chopped
  • 1 cup sweetened condensed milk
  • 1 tsp vanilla extract
  • 2 egg whites
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix shredded coconut, chopped pistachios, sweetened condensed milk, vanilla extract, and salt until well combined.
  3. In another bowl, whisk egg whites until soft peaks form. Gently fold into the coconut mixture.
  4. Drop heaping tablespoons of the mixture onto the prepared baking sheet, spacing them apart.
  5. Bake for 20-25 minutes until golden brown and crispy on top.
  6. Allow cooling on the baking sheet for about 10 minutes before transferring to wire racks.
