  • 1 cup graham cracker crumbs
  • 6 tbsp unsalted butter, melted
  • 1 cup roasted and salted pistachios, chopped (divided)
  • 16 oz cream cheese, softened
  • 1/2 cup sour cream
  • 3/4 cup granulated sugar
  • 1 cup blackberries (fresh or frozen)
  • 2 tbsp lemon juice
  • 2 tsp vanilla extract
  • 1 tsp gelatin powder (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Combine graham cracker crumbs and melted butter until crumbly, then press into the bottom of a baking dish.
  2. Bake the crust for about 10 minutes or until golden brown. Allow it to cool completely.
  3. In a large bowl, beat cream cheese until fluffy. Mix in sugar, sour cream, lemon juice, and vanilla until smooth.
  4. Gently fold in blackberries, being careful not to crush them.
  5. Spoon the cheesecake mixture over the cooled crust and smooth out evenly. Chill in the fridge for at least 4 hours.
  6. Before serving, sprinkle chopped pistachios on top and garnish with whole blackberries.
