  • 14 oz firm tofu, pressed and cubed
  • 1 cup pineapple chunks (fresh or canned)
  • ¼ cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 2 garlic cloves, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp sesame oil
  • 2 green onions, chopped (for garnish)
  • 1 tbsp toasted sesame seeds (for garnish)

Instructions

  1. Press the firm tofu to remove excess moisture. Cut into approximately one-inch cubes.
  2. In a bowl, whisk together soy sauce, brown sugar, minced garlic, grated ginger, and sesame oil to create the marinade.
  3. Toss the cubed tofu in the marinade until fully coated. Let marinate for at least 30 minutes.
  4. Heat a non-stick skillet over medium heat. Add marinated tofu and cook until golden brown on all sides (about 10 minutes).
  5. Stir in pineapple chunks and cook for an additional 2-3 minutes until caramelized.
  6. Garnish with chopped green onions and toasted sesame seeds before serving hot.
