  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 cup fresh cilantro, chopped
  • 1/4 cup lime juice (fresh-squeezed)
  • 1/2 cup sour cream
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste
  • 1 jalapeño pepper (optional)
  • 1/2 cup mayonnaise
  • 1 tbsp white vinegar
  • 2 tbsp grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Season the chicken breasts generously with salt and pepper.
  3. In a mixing bowl, combine minced garlic, chopped cilantro, lime juice, olive oil, and jalapeño (if using). Blend until smooth to create the marinade.
  4. Place the seasoned chicken in the baking dish and pour half of the marinade over it. Bake for 25-30 minutes or until cooked through (internal temperature of 165°F /75°C).
  5. While the chicken is baking, prepare the green sauce by mixing sour cream, mayonnaise, white vinegar, and any remaining marinade until combined.
  6. Once baked, let the chicken rest for five minutes before slicing or serving whole with the sauce drizzled on top.
