  • 1 cup ripe pears, diced
  • ¾ cup chopped walnuts
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs
  • ⅓ cup vegetable oil (or melted butter)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ tsp ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together flour, sugars, baking powder, salt, and cinnamon.
  3. In another bowl, beat eggs with oil and vanilla until frothy.
  4. Gently fold in diced pears and chopped walnuts.
  5. Combine dry ingredients with wet ingredients; stir until just mixed.
  6. Pour batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Cool in pan for 10 minutes before transferring to a wire rack.
