  • 2 large sweet yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 tsp fresh thyme leaves
  • 1 cup Gruyère cheese, grated
  • ½ cup Parmesan cheese, grated
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, drizzle olive oil and add sliced onions. Sauté until golden brown and fragrant (about 15 minutes).
  2. Stir in minced garlic, salt, pepper, and fresh thyme; cook until aromatic.

  4. Remove from heat and mix in Gruyère and Parmesan cheese until melted.
