  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 2 tbsp sugar
  • 1 tsp salt
  • 1 cup milk (whole or preferred variety)
  • 2 large eggs
  • 4 tbsp melted butter (plus extra for greasing)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, whisk together cornmeal, flour, baking powder, sugar, and salt until well combined.
  3. Create a well in the dry mixture and add milk, eggs, and melted butter. Stir gently until just combined; lumps are okay.
  4. Grease your baking dish with melted butter and pour the batter into it.
  5. Bake for 20-25 minutes until golden brown and a toothpick comes out clean from the center.
  6. Allow to cool slightly before slicing into squares. Serve warm with honey or butter.
