  • 3 lb chuck roast
  • 1 packet ranch dressing mix
  • 1 cup beef broth (low-sodium)
  • 1 jar (16 oz) whole pepperoncini peppers
  • 1 packet onion soup mix
  • 2 tsp garlic powder
  • 4 medium carrots, chopped
  • 4 medium potatoes, diced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Pat the chuck roast dry with paper towels and season generously with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear the roast on all sides until browned.
  3. Transfer the seared roast to a slow cooker. Sprinkle ranch dressing mix and onion soup mix over it, followed by garlic powder.
  4. Pour beef broth over the roast and add whole pepperoncini peppers on top.
  5. Cover and cook on low for 8 hours or until fork-tender.
  6. About 30 minutes before serving, add chopped carrots and potatoes.
  7. Serve with mashed potatoes or crusty bread to enjoy the delicious gravy.
