- 1 packet ranch dressing mix
- 1 cup beef broth (low-sodium)
- 1 jar (16 oz) whole pepperoncini peppers
- 1 packet onion soup mix
- 2 tsp garlic powder
- 4 medium carrots, chopped
- 4 medium potatoes, diced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Pat the chuck roast dry with paper towels and season generously with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear the roast on all sides until browned.
- Transfer the seared roast to a slow cooker. Sprinkle ranch dressing mix and onion soup mix over it, followed by garlic powder.
- Pour beef broth over the roast and add whole pepperoncini peppers on top.
- Cover and cook on low for 8 hours or until fork-tender.
- About 30 minutes before serving, add chopped carrots and potatoes.
