  • 4 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 cup powdered sugar (for icing)
  • 2 tbsp milk (for icing)

Instructions

  1. Preheat the oven to 325°F (160°C) and line a muffin tin with paper liners.
  2. Combine graham cracker crumbs and melted butter in a bowl; press mixture into muffin cups to form crusts.
  3. In another bowl, beat cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition.
  4. Stir in cinnamon and vanilla extract until combined.
  5. Spoon cheesecake mixture over crusts, filling almost to the top. Bake for 20-25 minutes until set.
  6. Allow cooling completely before removing from muffin tin. Mix powdered sugar and milk for icing; drizzle over cooled cheesecakes.
