  • 1 cup fresh button or cremini mushrooms, sliced
  • 4 large eggs
  • ½ cup low-fat milk (skim or almond)
  • 1 medium sweet onion, diced
  • ½ cup reduced-fat cheese (cheddar or feta)
  • Nonstick spray for greasing

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin with nonstick spray.
  2. In a skillet over medium heat, sauté the diced onion and sliced mushrooms for about 5 minutes until softened.
  3. In a bowl, whisk together the eggs, low-fat milk, salt, and pepper.
  4. Fold the sautéed vegetables and half of the cheese into the egg mixture.
  5. Pour the mixture into the muffin tin, filling each cup three-quarters full, and top with remaining cheese.
  6. Bake for 20-25 minutes until puffed and golden brown. Allow to cool slightly before serving.
