  • 2 tbsp fresh parsley, chopped

Instructions

  1. Make the Pasta Dough: On a clean surface or in a bowl, mound the flour and create a well in the center. Crack in the eggs and gradually incorporate the flour using a fork until a sticky dough forms.
  2. Knead the Dough: Knead for about 10 minutes until smooth and elastic. Wrap in plastic wrap and let rest for 30 minutes.
  3. Prepare the Filling: In a bowl, mix cooked lobster meat, ricotta cheese, Parmesan cheese, minced garlic, herbs, lemon zest, salt, and pepper until combined.
  4. Roll Out the Pasta: Divide rested dough into four pieces and roll each thinly using a pasta machine or rolling pin.
  5. Assemble Ravioli: Lay one pasta sheet on a floured surface; spoon mounds of filling at intervals along one side. Fold over and press down around each mound to seal.
  6. Cook Ravioli: Boil salted water in a pot; gently drop in ravioli and cook for about 3-4 minutes until they float.
