Instructions
- Prepare ingredients by washing and dicing the potatoes into small cubes. Chop bell peppers and onion.
- In a large skillet over medium heat, cook the chopped bacon until crispy. Transfer to paper towels to drain.
- In the same skillet with the bacon fat, sauté the onions and bell peppers until softened, about 3-4 minutes.
- Add diced potatoes along with salt, pepper, garlic powder, and smoked paprika. Cook until golden brown and tender (15-20 minutes), stirring occasionally.
- Return the bacon to the skillet. Create wells in the potato mixture and crack eggs into each well. Cover until eggs are set but yolks remain runny (5-7 minutes).
