  • 2 cups diced russet or Yukon gold potatoes
  • 6 slices thick-cut bacon, chopped
  • 4 large fresh eggs
  • 1 cup bell peppers, diced (any color)
  • 1 medium onion, diced
  • 1 cup shredded cheddar cheese
  • 2 tsp olive oil
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tsp smoked paprika

Instructions

  1. Prepare ingredients by washing and dicing the potatoes into small cubes. Chop bell peppers and onion.
  2. In a large skillet over medium heat, cook the chopped bacon until crispy. Transfer to paper towels to drain.
  3. In the same skillet with the bacon fat, sauté the onions and bell peppers until softened, about 3-4 minutes.
  4. Add diced potatoes along with salt, pepper, garlic powder, and smoked paprika. Cook until golden brown and tender (15-20 minutes), stirring occasionally.
  5. Return the bacon to the skillet. Create wells in the potato mixture and crack eggs into each well. Cover until eggs are set but yolks remain runny (5-7 minutes).
  6. Top with shredded cheddar cheese in the last minute of cooking until melted. Serve hot.
