  • 1 lb ground beef (a mix of lean and fatty)
  • 1/2 cup pork rind crumbs
  • 2 large eggs
  • 1/4 cup heavy cream
  • 1/2 cup low-sodium beef broth
  • 1 tsp Dijon mustard
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 4 oz cream cheese
  • 1 tbsp Worcestershire sauce
  • Fresh parsley (optional, for garnish)

Instructions

  1. In a large bowl, mix ground beef, pork rind crumbs, eggs, onion powder, garlic powder, salt, and pepper until combined.
  2. Form the mixture into 1-inch meatballs and place on a parchment-lined baking sheet.
  3. Heat oil in a skillet over medium-high heat. Sear meatballs until browned on all sides (8-10 minutes), cooking in batches if needed.
  4. Lower heat and add cream cheese to the skillet; stir until melted.
  5. Gradually whisk in beef broth and mix in Worcestershire sauce and Dijon mustard. Simmer for 5 minutes until slightly thickened.
  6. Return meatballs to the skillet and simmer gently for another 5-7 minutes.
