  • 1/2 cup fresh jalapeños, chopped (seeds optional)
  • 8 oz cream cheese, softened
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup plain breadcrumbs
  • 2 large eggs (room temperature)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 cup ketchup (for topping)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Finely chop the jalapeños; remove seeds for milder flavor if desired.
  3. In a large bowl, mix ground beef, chopped jalapeños, cream cheese, cheddar cheese, breadcrumbs, eggs, onion powder, garlic powder, salt, and pepper until just combined.
  4. Shape the mixture into a loaf on a lined baking sheet or in a loaf pan. Create grooves on top for ketchup.
  5. Spread ketchup generously over the meatloaf.
  6. Bake for 60-70 minutes or until the internal temperature reaches 160°F (70°C). Let it rest for at least 10 minutes before slicing.
